Spiced Parmesan Crusted Chicken Breasts

These Spiced Parmesan Crusted Chicken Breasts turned out better than I could have imagined.  The chicken breasts were so moist and the Parmesan mixture so flavorful.  This recipe is a keeper, that’s for sure.

I caught part of a commercial about Parmesan Crusted Chicken Breasts.  Having a DVR and being able to fast forward through commercials, it’s rare I see any commercials.  Isn’t technology fantastic?  I can’t even tell you what the commercial was selling.  Maybe mayo, but I’m thinking it may have been yogurt.

I didn’t have any yogurt at the time I made these chicken breasts, but thought I’d try it with mayonnaise.  Most of the fat from the mayonnaise melted off into the bottom of my baking dish so I don’t feel too guilty about the extra calorie intake.

Cayenne pepper seems to end up in most of my recipes, but if you’d rather not have the spice, these chicken breasts will still be delicious.  In fact, even omitting the garlic, and switching out the lemon pepper for a seasoning you’d prefer should be fine.  It’s the mayo with the Parmesan cheese that kept the chicken moist and crusted so nicely.

So, feel free to switch up this recipe with your favorite seasoning and/or herbs.  It’s all about being creative in the kitchen.

I served these spiced Parmesan Crusted Chicken Breasts with my olive oil & garlic asparagus and buttered parsley potatoes.

Spiced Parmesan Crusted Chicken Breasts | Recipe

(Serves 2)

2 Boneless Skinless Chicken Breasts
1/2 c. mayonnaise
1/2 c. Parmesan cheese
1 garlic clove
1/2 tsp. lemon pepper
1/8 tsp. cayenne pepper

  1. Trim any excess fat from the chicken breasts and place in a lightly greased baking dish.  (Spray oil is perfect.)
  2. In a medium size bowl, mix the mayonnaise and Parmesan cheese.
  3. Finely chop or squeeze the garlic clove through a garlic press into the mayo mixture.
  4. Add the lemon pepper and cayenne pepper and mix thoroughly.
  5. Spread mixture evenly on top of the chicken breasts.Spiced Parmesan Crusted Chicken Breasts 1
  6. Place in a pre-heated 400° oven.  Bake for 30 minutes.Spiced Parmesan Crusted Chicken Breasts 2

  1. I love simple and quick recipes and this one also sounds delicious. Can’t wait to try it. I am going to use low fat olive oil mayonnaise to also make it healthy. Although, the chicken breast makes it healthy also.
    I also like garlic in just about anything so adding it into the mayonnaise will give it that extra special flavor.

    Your other chicken recipes also look yummy. Can never have too many chicken recipes. Thanks for sharing.

    • I’m with you….simple and quick. I think switching up for low fat olive oil mayo will be just as tasty. I buy Duke mayo and there are very few ingredients. Although it’s not lower in fat, it makes me feel better to not have all the preservatives. Hard to keep healthy on every menu item, but we have to try, right? I love garlic also. Everything tastes better with garlic. LOL I’d love to hear how it turns out. Thanks for visiting.
