Sausage Vegetable Soup

It doesn’t matter what time of year it is, I love soup.  This Sausage Vegetable Soup was so simple.  Don’t miss out on making soup because you think it’s an all day project.

When you think about it, a lot of soups are just a few ingredients with water or some kind of stock base.  The key is the seasoning.  Sometimes all you need is salt and pepper, but you have to keep tasting till you have the right proportion so your soup won’t be too bland.

In this Sausage Vegetable Soup, I only used salt and pepper and a small amount of nutmeg, but I used a hot Italian sausage so there was a little spice.  If you’re not into spicy foods, just use a mild or sweet sausage.

This soup is LOW-CAL (if you drain off all the grease from browning your sausage), and it’s GLUTEN FREE.

When I made this soup, my neighbor had just given me several large bags of lettuce from her garden.  I decided to use one of those bags for the greens in my soup, but spinach or even kale could be used instead.

I first used lettuce in soup to make my Bacon, Lettuce and Tomato Soup and was surprised how much I like it as a “green” in soup.  I’m hooked and I know now that I can use up my lettuce before it wilts and turns brown by just adding it to a soup or even a casserole.  Even if your lettuce has already started to wilt and it’s just not fresh enough for a salad, make a quick soup.

Sausage Vegetable Soup | Recipe

(Makes 6-8 bowls of soup)

1 lb. hot Italian sausage (or mild, sweet)
3 medium size turnips (cubed)
3 medium size carrots (grated – about 2 c.)
6-8 cups water
1 shallot (or small onion)
1/4 tsp. nutmeg
salt and pepper (to taste)
1 bunch leaf lettuce

In a large sauce pan, brown sausage with cubed turnips.

When sausage has browned, drain as much grease as possible.

Add water, carrots, shallots (or onion), nutmeg and salt & pepper.

Simmer 10-20 minutes or until the turnip cubes are as tender as you like.

Taste to make sure you have added enough salt and pepper.

Once it’s flavored as you like, add all the chopped lettuce.

Simmer another 2-3 minutes and serve.

What can be more simple than that?  I hope you like this Sausage Vegetable Soup as much as we did.  There are some soups that I make only once or twice a year, but this one will definitely be on our table often.  Love that it’s so filling, yet low calorie.
