Cranberry Pecan Coffee Cake


 Who doesn’t love coffee cake with a streusel topping?  This Cranberry Pecan Coffee Cake has the sweetness we all love with a little bit of tartness from the cranberries, and a great crunch with the pecans and streusel topping.  Not to mention that it’s moist instead of dry like a lot of coffee cakes.

Cranberry Pecan Coffee Cake

With the great deals on cranberries this fall, I wanted to bake some of my favorite recipes and add cranberries.  There are so many great recipes, but I will start with this cranberry pecan coffee cake.

This coffee cake is one of those cakes that are really great for breakfast along with coffee or tea, but it also makes a wonderful dessert.  Serve it warm with some vanilla ice-cream or top it with whipped cream.  No matter when or how you serve it, I think you’re going to love it!

Cranberry Pecan Coffee Cake | Recipe

Call to ActionBatter Ingredients:
1-1/2 cups all-purpose flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3/4 cup sugar
1/2 cup butter (melted)
1/2 cup milk
1 teaspoon vanilla extract
12 oz. cranberries (whole, fresh)
1 cup chopped pecans

Streusel Topping Ingedients:
1/2 cup sugar
1/4 cup all-purpose flour
1/4 cup soft butter
1 teaspoon cinnamon

Instructions for Batter:

Sift together (or use a whisk) flour, baking powder, and salt.

In another bowl, beat egg with electric mixer until it’s a little frothy. Then beat in sugar and melted butter until well combined. Blend in the milk and vanilla.

With a wooden spoon, mix in the flour mixture until thoroughly combined.

Mix dry ingred into egg batter

Add cranberries and mix gently just until cranberries are throughout the batter.

Pour into lightly buttered (or use spray oil) 8x8x2 inch baking pan OR 9 inch layer cake pan. (Or a baking dish you have of similar size.)

Sprinkle chopped pecans evenly over top of batter.

Instructions for Streusel Topping:

Add all ingredients in a bowl and, using a fork, mix just until all ingredients are combined. Should be loose and crumbly.

Sprinkle streusel topping evenly over batter and pecans.

Bake in a pre-heated 375° oven for 25-30 minutes. Streusel topping should be slightly browned.

Cool at least 15-20 minutes before serving.

    • Thanks, Donna. I still have 2 bags of cranberries in my freezer from the holidays just so I could enjoy this throughout the year. I had pecans so I chose to use them, but I’m sure this would be great with almonds, too. Everything’s better with a streusel topping don’t you think? LOL
