Black Beans and Yellow Rice

So simple and so tasty!!  Black Beans and Yellow Rice just seem to go with any Tex-Mex or Spanish dishes.  I love to put the beans right on top of the rice, then top that with some chopped raw sweet onion.

This recipe is so simple you won’t even believe it could be this good.  You don’t even need to serve it as a side dish.  Make it the main course.  After all, beans and rice make a complete protein….right?  And, it’s certainly filling enough to be a meal all by itself.

So, I may have used a package of Vigo Yellow Rice and a can of black beans, but this dish was just as good as any black beans and yellow rice that I have ordered in a restaurant.  It may be simple ingredients, but it sure doesn’t make it any less flavorful.

Have I ever told you how much I love my Rival Rice Cooker?  I just follow the instructions on the back of the yellow rice package, but put it all in my rice cooker.  Once you turn it on, you don’t have to do anything else.  No worries about it boiling over or burning.  It’ll turn off when it’s cooked and stay warm till you’re ready with the rest of your meal.  It’s the best!

Black Beans and Yellow Rice | Recipe

(Serves 4-6)


1 – 8 oz. pkg. of Vigo Yellow Rice
1 can of black beans
1 sweet onion (chopped)
1/2 tsp. garlic powder
1/4 tsp. cayenne pepper
salt (to taste)
1 large green bell pepper (optional)
1 or 2 peppers from a jar of Vigo Flame Roasted Red Peppers (optional)
spray oil (to saute peppers if you choose)


  1. Cook the yellow rice according to package instructions.Yellow Rice
  2. Pour can of black beans into a microwave safe bowl and stir in garlic powder, cayenne pepper, and salt.  Microwave on high for 2 minutes, stir, and microwave another 1-1/2 minutes.  (Or more depending on your microwave.)  (This can also be done in a pot on the stove.)Black Beans
  3. If you have chosen to use the green bell pepper and the roasted red pepper, saute the green pepper in a frying pan with the spray oil for approximately 10 minutes.  Just to soften a bit.  Add the roasted red peppers and saute just until heated thoroughly.Roasted Red Peppers
  4. When your rice is done, serve by first layering the yellow rice, then the black beans, then top with the chopped raw onions.  For added vegetables and really great color, top with a few of the green and red peppers.

Yep!  It’s that easy.  Just by adding a little extra flavor to the black beans, you have a dish that is comparable to any rice and bean dish you can order in a restaurant.  I hope you enjoy this recipe for black beans and yellow rice as much as we do.

    I love black beans but I can’t eat a lot of them. My problem is when I really like something I want to eat more of it and we all know what beans can do right! LOL!!!

    Sounds really yummy though and will be sure to hang on to this recipe. I love to try different things.
